We usually sell quarters, halves, and whole animals. Normally we take orders well in advance and use a waiting list. When selling in 1/4's and above, we need to sell by the live weight for legal reasons. Our price is $3.95 per pound live weight and they normally weigh about 1200 to 1600 pounds live, so 1/4 would average 350 pounds X $3.95 per pound = $1,382. Every animal dresses out a little differently, but I would estimate a yield of about 125 pounds of edible meat from the ¼ if it was an average sized animal making the cost per pound of edible meat about $11.00. With regard to cuts, I generally figure that about 15 % of the meat will be steaks, 30% roasts, and the rest ground beef. On occasion, if we get caught up, we also sell sampler packs. Sampler packs are usually 20 to 30 pounds of edible meat and represent approximately 1/20 of the steer. They sell for about $12.80 per pound of edible meat, so usually cost $256 to $384. Hopefully that helps. Unlike most places, all of our prices include processing at a federally inspected, organic facility, so there are no additional fees. Both the Belted Galloway and Wagyu are raised on our certified organic pastures, but the Wagyu do get a little bit of non-GMO grain to supplement their diet due to their extremely high metabolism.
