 We usually sell quarters, halves, and whole animals.  Normally we take orders well in advance and use a waiting list.  When selling in 1/4's and above, we need to sell by the live weight for legal reasons.  Our price is $4.75 per pound live weight, and they normally weigh about 1100 to 1400 pounds live, so 1/4 would average 312 pounds X $4.75 per pound = $1,482.  Every animal processes out a little differently, but I would estimate a yield of about 120 pounds of edible meat from the ¼ if it was an average sized animal, making the cost per pound of edible meat about $12.35.  With regard to cuts, I generally figure that about 15 % of the meat will be steaks, 30% roasts, and the rest ground beef.  On occasion, if we get caught up, we also sell sampler packs.  Sampler packs are usually 20 to 30 pounds of edible meat and represent approximately 1/20 of the steer.  They sell for about $13.50 per pound of edible meat, so usually cost $270 to $405.  Unlike most places, all of our prices include processing at a federally inspected, organic facility, so there are no additional fees.  Due to the high demand for grass-fed beef, we have implemented a program where we cross the Belted Galloway with the Wagyu, so all of our animals are now primarily grass-fed their entire lives on our certified organic pastures and alfalfa hay.  This has given us the best of both worlds where the slow metabolism of the Galloway breed, and the rich marbling of the Wagyu, come together to provide a healthy and superior quality beef!
